Healthy Banana Oatmeal Sponge Cake Bars for Kids (GF)

  1. 1 cup mashed ripe banana
  2. 2 cups GF oatmeal
  3. 1/2 tsp. vanilla
  4. 1/4 cup applesauce
  5. 1/3 cup raisins
  6. 1/2 tsp. cinnamon
  1. Heat oven to 350 degrees.
  2. Mix all ingredients until moist. Mixture will be gooey and sticky. Drop by tablespoonful onto ungreased baking sheet.
  3. Flatten to desired thickness and shape, as cookies WILL NOT spread on baking. Bake at 350 degrees for 15 minutes, remove to wire rack to cool.
