Pasta Salad

  1. 1/2 lb. elbow macaroni
  2. 1 cup diced carrot
  3. 1 cup diced celery
  4. 1/4 cup diced red onion
  5. 1/2 cup diced bell pepper
  6. 1/3 cup diced dill pickle
  7. 1/4 cup diced black olives
  8. 1/2 cup real Greek yogurt or mayo
  9. 2 tablespoons white distilled vinegar
  10. 3/4 teaspoon dried basil
  11. 1/2 teaspoon dried oregano
  12. salt & pepper, to taste
  1. Bring large pot of water to boil. Salt water generously and pour in pasta. Stir and cook 7-10 minutes or until al dente. While pasta is cooking chop all your veggies. Drain pasta and rinse under cold water until cold.
  2. Pour into large bowl and top with chopped veggies. Stir in yogurt, vinegar and seasonings until everything is well coated. Refrigerate until ready to serve.
  3. Portion out for lunch and place in separate container, gather other baggies/lunch ware. Place in lunchbox and your done.
